Chicken Fajita Chili

"One of my FAVORITE recipes is Chicken Fajita Chili! It’s so delicious and so easy to make! You can prep ahead of time and throw all the ingredients in freezer bags so you can dump and go if you prefer! It’s one of my favorite healthy recipes, and it’s important to have a few healthy recipes on deck that you LOVE! Always my go-to!"

Ingredients:
- 1 small yellow onion, chopped
- 2 cans rotel tomatoes/chilies
- 3 bell peppers, sliced/diced
- 3 garlic cloves, minced
- 1 TB paprika
- 1 TB chili powder
- 2 tsp cumin
- 2 tsp oregano
- ¼ tsp red pepper flakes
- 1 lb boneless, skinless chicken breast
- 1 carton chicken broth
- OPTIONAL: 1-2 cups kale or spinach, and extra chicken broth

Directions:
If you own an instapot or pressure cooker, you can throw all these ingredients in, stir it up, set it for 25 minutes on a soup or chicken setting and wait! If you have a crockpot, you can throw all these ingredients in and cook for 6-8 hours on high. Add in the kale or spinach for some added color to the soup if you’d like! Shred the chicken then serve! Top with cheese, sour cream, and/or avocado for a little extra flavor (even though it’s already PACKED with it!
